Chickweed is Stellaria media, named for its small white star-shaped flowers, and it grows almost everywhere, including well into the Arctic. It is edible and mild, more salad green than herb, and is eaten raw as well as brewed.

The English name is literal: chickens and other poultry will strip a patch of it bare.

The star-shaped flower has five petals, but each one is split so deeply that it looks like ten. It is the quickest way to tell chickweed from the things that grow alongside it.

It is a cool-weather plant and will flower through mild winters, which is why it turns up in gardens in months when almost nothing else is green.

Brewing Instructions:

Bring filtered or spring water to 212°F. Add 1 tsp of tea leaves to an 8oz cup. Pour boiling water over the tea leaves and let steep 7 minutes.

I bought this tea for my daughter who suffers menstrual cramps pretty bad and I have only been able to get her to drink half of one cup. She informed me she'd rather suffer the pain. This tea was quite strong in the flavors and will only be drank when we are sick or in absolute need of it.
