Hops are the flower of Humulus lupulus, a climbing perennial in the same family as cannabis. The papery green cones are intensely bitter and resinous.
Brewed on their own as a tea they are a hard drink, so they are more often a small part of a blend. We use them in Extra Sleepy Bear, where stevia balances the bitterness.
Hops climb by wrapping their stems around a support, not by tendrils, and a mature plant will put up bines of twenty feet in a season before dying back to the root in autumn.
The bitter compounds in the cone are also a preservative, which is the origin of the India Pale Ale. Before refrigeration, ordinary English casks did not survive the six-month passage from London to India, so shipments bound for the Empire's outposts were made with an extra measure of hops to keep them sound. The style outlived the reason for it by two centuries.
Bring filtered or spring water to 212°F. Add 1 tsp of tea leaves to an 8oz cup. Pour boiling water over the tea leaves and let steep 5 minutes.
