Pai or Bai Mu Dan is a type of white tea made from the unopened buds and first leaves on the tea plant. Leave picked after this time cannot be used to create white tea. The leaves are then allowed to wither and dry in the sun, keeping the leaves close to their original format.
Bring filtered or spring water to 180°F. Add 1.5 tsp of tea leaves to an 8oz cup. Pour boiling water over the tea leaves and let steep 4 minutes.
