Oolong tea leaves are best used for multiple infusions. Shangri-La Oolong translates very nicely with a hot but brief first infusion, with slightly cooler but longer subsequent steeps. The leaves may be re-infused several times, with each resulting infusion yielding different liquor from the proceeding cup.
Bring filtered or spring water to 180°F. Add 1.5 tsp of tea leaves to an 8oz cup. Pour boiling water over the tea leaves and let steep 3 minutes.
