In South America roasted mate, known as "mate cocido" in Paraguay is served sweetened, either hot or iced, with fruit juice or milk. The toasted variety of mate has less of a bitter flavor and more of a spicy fragrance. When shaken it becomes creamy (since the formed foam gets well mixed and lasts for some time), known as mate batido and it is more popular in the coastal cities of Brazil.

Brewing Instructions:

Bring filtered or spring water to 180°F. Add 1 tsp of tea leaves to an 8oz cup. Pour boiling water over the tea leaves and let steep 5 minutes.
