Roasted green tea (Hojicha or Houjicha) has a mellow nutty flavor that is simultaneously light and sweet. Hojicha has none of the bitterness of traditional green teas, and is typically lower in caffeine.
Hojicha has been one of the most commonly enjoyed teas in Japan since its discovery in the 1920's. Because of its low-caffeine property, it has been enjoyed by children, the elderly, and even patients in hospitals.
Bring filtered or spring water to 160°F. Add 1 tsp of tea leaves to an 8oz cup. Pour boiling water over the tea leaves and let steep 2 minutes.
