Hawthorn is in the rose family, which shows in the flower. It is most often a blending herb, seldom drunk on its own.
Hawthorn turns up all over European folklore. It was said to be the wood of the crown of thorns and of the staff of Joseph of Arimathea. Serbian and Croatian tradition held it to be deadly to vampires and specified hawthorn for the stake. In Ireland a lone hawthorn in a field is a fairy tree, and there are roads that bend around one to this day.
The hedges themselves are the practical story: hawthorn was the standard planting for English field enclosure because it grows dense, tolerates cutting and is thorny enough to hold livestock. The word haw is the old name for the fruit.
Bring filtered or spring water to 212°F. Add 1.5 tsp of tea leaves to an 8oz cup. Pour boiling water over the tea leaves and let steep 7 minutes.
