Traditionally, Earl Grey refers to any type or blend of tea scented with oil of bergamot, a citrus fruit resembling an orange, native to the Mediterranean region. Interestingly, during the time when Corfu, Greece was the hub of the bergamot trade, it also served as the headquarters for the British Mediterranean fleet, overseen by Lord Grey in London.
Bring filtered or spring water to 212°F. Add 1 tsp of tea leaves to an 8oz cup. Pour boiling water over the tea leaves and let steep 4-5 minutes.
