Raw multi-floral amber honey from Taos Honey Co., whose hives are all in northern New Mexico. The colour and flavour move through the season as the bees work different sources: fruit trees, elms and junipers in spring, then sage, alfalfa, clover, thistle and sunflower.

Raw means unheated and unfiltered, so it will crystallise over time. That is a sign it has not been processed, not a fault; warm the jar gently in water to return it to liquid.
