This pure white tea brews into a lovely, smooth, delicate tea with sweet earthy tones.

Silver Needles refer to the buds of the tea plant. The leaves or buds of white tea are not steamed or pan-fired (the process used in green teas) or oxidized and fired (the process used in black tea). The leaves are naturally withered and dried in the sun. Because white tea is the least processed type of tea, you can still see the fibers on the individual buds. If mechanical drying is required it is a baking process at temperatures less than 104 degrees Fahrenheit.

Brewing Instructions:

Bring filtered or spring water to 180°F. Add 1.5 tsp of tea leaves to an 8oz cup. Pour boiling water over the tea leaves and let steep 4 minutes.

Other Brewing Options:

This white tea is best enjoyed when the leaves are briefly infused with hot water, which is then poured off. The tea is then re-infused for the recommended time. The leaves may be re-infused several times, with each resulting infusion yielding different liquor from the proceeding cup.

This delicate tea is perfectly humble in presentation. With a beautiful peach color, it brings forth distinctly floral notes of lilac and morning dew, with soft mineral undertones that transport the mind to a place of freshwater greenery and trickling streams. Each successive brew brings forth delightfully evolving characteristics and adds to the overall experience, while the floral bouquet lingers on the pallet long after the last sip is swallowed. While the first brew tends to be quite mild, each subsequent brew gets sweeter and more floral. Best when brewed strong, the traditional Gaiwan method.

I have tried an assortment of white teas from other sources and I have not been impressed. I bought a sample of this one just to compare with the others. I had suspected I just didn't like white tea. But New Mexico Tea Company proved me wrong. I have been brewing this tea in my own slap dash way. About 5 frams of tea in a 100 ml gaiwan. 180 ° f water, steep for 2 minutes for the first and second brews. Subsequent brews I bring the water temp up 5° and steep for 2.5 minutes. Doing it this way I get about 8 really yummy steeps. Each steep brings out some new flavor. From piney, honey like in the first infusion, to stone fruits, then citrus the a little floral and ending a little spicey. I want to drink this tea all day every day but I dont just so I can truly appreciate the deliciousness anew.

These wispy needles need a long, warm bath to wake up.For the first infusion, give it 3-5 minutes. The liquor is an amber color, similar to a light apple cider. The aroma starts as mountain lilac with a stone fruit underneath. becoming more fruity with successive infusions. The taste is a delicate flavor of peaches in dried grass and a lilac perfume. Three minute splashes in hot water keep bringing life to these little leaves.
